Bacon Jalapeno Corn Salad

The Valley Shopper 26th Annual Recipe Book, p. 16

3 cups corn

6 slices cooked bacon

1 tbsp cilantro

1 jalapeno, minced

1/3 cup mayonnaise

Juice of 2 limes

1 tsp chili powder

1 tsp garlic powder

Kosher salt

Freshly ground black pepper

This recipe is just one amazing smell after another.

See? Here comes another one.


In a large bowl, combine all ingredients. Stir until ingredients are completely mixed and coated in dressing. Garnish with herbs, if desired, then serve.

Served with fish sticks because I'm a gay fish.

My Rating: 5/5 "I adored this. Wonderful blend of sweet and savory with on-point seasonings. It wasn't as good as leftovers as it was fresh, but even as leftovers it had a delicious, memorable flavor. Well worth the time!"
