Green Onion Steak

Dr.Gott’s No Flour, No Sugar Cookbook, p. 191

1 pound steak, fat trimmed

¼ cup sugar-free tamari sauce

1 clove garlic, minced

½ teaspoon peeled and grated fresh ginger

¼ cup extra virgin olive oil

1 large red bell pepper, cut into ½-inch strips

2 celery stalks, chopped

1 cup diagonally sliced green onions

1 tablespoons cornstarch

1 cup water

2 large plum tomatoes, quartered

I haven't done much aggressive-energy chopping lately. It felt good.


Cut steak into 1/8”-thick strips. Combine with tamari, garlic, and ginger in medium bowl. Mix and set aside while preparing vegetables.

In large pan, heat oil over medium-high heat and stir in beef mixture. Cook until browned, stirring frequently. Add in red pepper, celery, and green onion and cook until al dente, about 5 minutes. Mix cornstarch with water and add to pan, stirring constantly, until thickened. Add tomatoes and heat through.

Serve.

My Rating: 3/5 "This recipe must stem from the philosophy of cooking that says healthy food must be bland food. Stir-fry can and should have spices and flavorings in it. This is healthy, and it tastes "healthy" too. Hopefully if y'all make it you can add some pizzazz."
