The Hungover Cookbook, p. 47
4 thick slices good-quality fresh white
bread
2 tbsp crunchy peanut butter
1 banana, mashed with the back of a fork
1 tbsp honey
8 slices free-range streaky bacon
Butter, for frying (optional)
My kid had fun helping with the banana-mashing. |
Thickly spread each slice of bread with the peanut
butter. Cover two slices with the mashed banana and drizzle with honey.
Grill the bacon until crispy then place on top of the
bread. Top each sandwich with a second slice of bread. For extra calorific
value (and authenticity), carefully fry each sandwich in butter.
Well we don't want to sacrifice authenticity! |
If this sandwich becomes a habit, get friendly with a
cardiac surgeon. You may need one.
I made the sandwich with turkey bacon and served it with an apple, thus assuaging my health-guilt. |
My Rating: 4/5 "I see why The King was a fan of this. The smokey, savory bacon flavor hits well with the sweet banana. I might suggest a little more peanut butter than the recipe calls for, though. Taste some rock 'n' roll history!"
