Great Green Veggie Wedgies

Kids’ Treats, p. 52

½ cup whipped cream cheese

2 (8- to 10-inch) spinach tortillas

¼ cup apricot or peach fruit spread

½ cup coarsely chopped fresh baby spinach

¼ cup grated carrot

Such nutrients!

Evenly spread cream cheese over one side of each tortilla.

Spread fruit spread over cream cheese on one tortilla. Sprinkle spinach and carrot over fruit spread.

The co-op didn't have spinach tortillas, but the whole wheat ones I found were tasty.

Place the second tortilla, cheese side down, on top of the spinach and carrot. Lightly press tortillas together.

Cut the tortilla sandwich into 8 wedges.

Or wedgies, as the case may be.

My Rating: 4/5 "The peach jam I used made thing sweeter than expected, but the sweetness would definitely make these veggies more appealing to the littles. (Except my toddler. But he's incredibly picky.) It's fun to eat tidy little triangles!"
